Personally I would greatly dislike such a route. However, I know a few players have tried and created freeware underground routes, so it may be that you can find something that satisifies your desires within TS. But yes it's definitely a challenge to build tunnels and underground stations I agree on that. But it would be nice to see a line of the London subway or the Paris subway or the Berlin U-Bahn all of whom are not entirely underground.
51% of track on the London Underground network is above ground. Only the Victoria and Waterloo & City lines are completely underground. But if you want either of those two, then it would be a challenge (and a pain) to build. The Sub-surface lines would probably be easier to create as they have various sections of tunnels and open sections. Personally, I would like to see the LU Metropolitan line from Baker Street - Amersham, as it's a very nice commuter route, stretching from Central London to the Buckinghamshire country side. The line is also used by Chiltern Railways as they run services between Marylebone and Aylesbury along the line. The route features the Class 165/0 Networker and the LU S8 stock.
